Homemade Pink Marshmallow Recipe for Valentine's Day!

The day of love is quickly upon us! & I decided for this post to make something that EVERYONE can enjoy.

You can make the marshmallows with your love or your family, OR just enjoy them in a hot chocolate or warm adult beverage (Bailey's & Hot Cocoa/ Coffee please!)
This is also a fun recipe to make with kids because it is easy, gooey, and involves food coloring. The recipe also is free of corn syrup and a candy thermometer... rejoice!
Not only are these marshmallows pretty & rustic, they are very delicious!

Homemade Pink Marshmallow Recipe

Ingredients:
2 tablespoons of gelatin (This = 2 packets of Knox brand gelatin)
2 Cups of granulated sugar
1/4 teaspoon salt
2 teaspoons vanilla extract*
water
powdered sugar
red & blue food coloring*

*substitute vanilla extract + food coloring with 2 teaspoons of your favorite flavored red syrup, such as grenadine 

Directions :

1. Place gelatin in a small bowl, and add 8 tablespoons of cold water. Set aside.

2. Combine sugar and 1/2 cup of water in a saucepan. Place over medium heat on the stove and stir until sugar is dissolved (the "water" will be a murky brown color).

3. Add gelatin into the saucepan, and bring mixture to a boil. This will happen quickly, so don't walk away!

4. Remove saucepan from heat and pour mixture into a large mixing bowl. Let sit until somewhat cool.

5. Add salt, vanilla extract, and food coloring to mixture. To achieve the color in the pictured marshmallows, use six drops of red, and one of blue.

6. Beat with a mixer until mixture looks soft and doubles in size. This will take about 10-15 minutes.

7. Dust a pan with powdered sugar to prepare for sticky mixture.

8. Pour the mixture into the pan about 1/2 inch thick.

9. Place mixture in fridge to cool. The marshmallows should not be sticky to the touch. (Overnight should be enough time)

10. Cut marshmallows into squares, and roll them in powdered sugar.

11. Place in your favorite warm drink, and enjoy! <3
