Healthy Peanut Butter Blossoms

The holidays are such a fun time of year. Family, friends, food... lots of food! It's so easy to indulge because it really is a time of celebration. That being said, most of us probably over-indulge (guilty), so it's nice to have healthier alternatives.

Once I saw this healthy Peanut Butter Blossom recipe from Tone It Up, I was ecstatic! I love these cookies, and was really pumped for a healthier version. Lots of the reviews on their page complained that the finished version was a bit too dry for them, so I did some experimenting and tweaking, and found a combination that worked perfectly for me.

PSA - These are healthy cookies. They aren't going to taste exactly like the OG peanut butter blossoms, but they are very close. My boyfriend wasn't a huge fan of this recipe, but I personally really enjoyed it. So you know what that means? More for me :).

Healthy Peanut Butter Blossoms 
Yields around 18 cookies

1 Cup of Natural Peanut Butter
2 Scoops of Vanilla Protein (I used Tone It Up's, but you can use whatever you'd like!)
1/3 Cup of Eggs Whites
1 Tbls of melted Coconut Oil
1 Tsp of Vanilla Extract
Big Pinch of Salt
18 Chocolate Kisses


1. Preheat your oven to 350 degrees F

2. Combine all ingredients (except for the chocolate kisses) in a large bowl and mix well.

3. Roll the dough into tablespoon size balls, and place on a cookie sheet (either greased with cooking spray, or with parchment paper).

4. Bake for 9-10 minutes in the oven.

5. Top the fresh-from-the-oven cookie with a chocolate kiss and enjoy!
