Spiced Banana Bread Muffins

Everyone knows that Fall is kind of my #1 bae. I enjoy being basic, wearing sweaters & boots, sipping & nomming on all things pumpkin & spicy, and so much more. Luckily for me, We always have at least one super ripe banana at the end of the week, which means banana bread.

I whipped up this recipe, kind of from my imagination, if i'm being honest. We only had one 'nana this time around, so if you have more, feel free to double it up. I made it extra Fall-Like, not by adding pumpkin (see here for my rustic banana-pumpkin bread) but by adding a super-special secret ingredient to the mix. --- It's actually not a secret as it is in the recipe below. Fine, okay, it's Pumpkin Pie Spice. There! I said it.

Spiced Banana Bread Muffins
yields 6 regular-sized muffins

1 ripe, mashed banana
1/8 cup nut butter of your choice
1 egg
1/8 cup maple syrup
1/2 tsp vanilla
6 Tbsp whole wheat flour
1/2 tsp baking powder
1/4 tsp baking soda
Big pinch of salt
1/2 tsp pumpkin pie spice
1/4 cup chocolate chips (optional).

1. Preheat the oven to 375 degrees Fahrenheit.
2. Mash banana in a large bowl.
3. Add the rest of the ingredients to the bowl.
4. Combine all ingredients with a large spoon. Stir well.
5. Grease your muffin tin with spray of your choice (I always use coconut oil spray when baking).
6. Pour batter into the muffin tin.
7. Bake for 25 minutes, or until a toothpick comes out of a muffin clean.
8. Let muffins cool, serve, and enjoy!
